Eggnog...

No Xmas without eggnog !

This eggnog's rich, cloudlike texture is produced by separating the eggs and beating the whites before adding them to the milk mixture. The eggnog base can be made one day in advance, just beat in the stiff egg whites and whipped cream just before serving.




















Ingrédients :
12 eggs, separated,
1 1/2 cups superfine sugar,
1 quart whole milk,
1 1/2 quarts heavy cream,
3 cups bourbon,
1/2 cup dark rum,
2 cups cognac,
Freshly grated nutmeg.

In a very large bowl, beat egg yolks until thick and pale yellow,
Gradually add sugar to yolks.
With a wire whisk, beat in milk and 1 quart cream,
Add bourbon, rum, and cognac, stirring constantly,
Just before serving, beat egg whites until stiff,
Fold into mixture.
Whip remaining 1/2 quart heavy cream until stiff, and fold in.

Sprinkle with nutmeg.

Another recipe without alcohol.


Ingredients :
6 eggs
1/4 cup sugar
1/4 tsp salt
1 quart milk
1 tsp vanilla
1/4 tsp nutmeg
1/4 tsp cinnamon

Beat eggs, sugar and salt together in a saucepan.
Stir in half the milk (2 cups).
On low heat, cook until mixture is thick and thinly coats a spoon.
Make sure to stir constantly.
Remove from heat and mix in the last of the milk and the vanilla.

Cover and chill overnight.

Serve eggnog with a dusting of nutmeg and cinnamon.

Egg Liquor...Eier Likör...Liqueur d'Oeufs...

Self made egg liquor makes a nice present.








Ingredients :

500 milliliters milk
5 egg yolks
400 grams sugar
2 packages vanilla sugar
1 tablespoon rum
375 milliliters grain alcohol, or schnaps,

Bring milk to a boil, remove from heat and set aside to cool completely.
On high speed, beat yolks and sugar.
Add vanilla sugar and beat until light and foamy.
Add cooled milk slowly while continuously stirring.
Add rum and grain alcohol.

If egg liqueur is too thick, add some more boiled and cooled milk. Egg liquor is thicker than the typical eggnog.

Fill into wide-neck bottle, let sit for several weeks,


Then enjoy or use for recipes.
